The meal starts with a mushroom wafer canape with caramelised onion and wild garlic – a tasty bite while you prepare your starters. The meat starter is a burrata cheese served with watercress, crispy pancetta and beetroot – a fresh and tasty start to the meal. For the vegetarians the starter is new season heritage carrots with radish, buttermilk and dill – a super seasonal start to the meal.
The main event for the meat eaters is a beef rump cap, which is already cooked to perfection and just requires sealing in a pan and heating in the oven – super simple. The beef is served with a caramelised Jerusalem artichoke, white onion and green peppercorn sauce. For the vegetarians, the main course is salt-baked celeriac, turnips and baby leeks served with a Montgomery cheddar sauce.
The dessert is a vanilla cheesecake served with poached apples, burnt apple gel and crystalised ginger. The meal is then finished with bang-in-season citrus tarts.
